Cottage Cheese Pancakes


OK, be honest.  You read the title and said to yourself, "What is cottage cheese doing in a pancake?"  I'll tell you what it's doing there.  It is making your pancake so moist that every bite is fabulous and it's adding protein to your breakfast.  Beating the egg whites to soft peaks and then folding them into the batter help make these light and fluffy.  This is actually a recipe that my mother would make when I was a little girl.  She would whip up lots and lots of these to feed our hungry and large family.  And on a school day!!  What a woman!!  We on the other hand have termed these a "weekend breakfast" menu item.  We make them nice and big filling our entire plate.  Enjoy!

Cottage Cheese Pancakes

5 eggs, separate yolks and whites
1 1/2 cups cottage cheese
3/4 cup flour
3 Tblsp powdered sugar
1/4 tsp salt

Beat egg whites with the wire whisk in an electric mixer until they peak. Mix egg yolks, cottage cheese, flour, sugar, & salt in separate mixing bowl.    Fold egg whites into batter mixture.  Fry immediately in hot oiled pan.  Made large.  Serve hot with syrup.
