Swiss Birchermuesli


While visiting my brother in New York, he served us a most amazing breakfast.  A friend of his, who happened to be Swiss, had given him the recipe, which we quickly adopted in our home.  And since you just soak the oats overnight and never have to cook anything, we have made this a Christmas morning breakfast tradition.  My kids LOVE it, we love it, and I feel I'm sending them off with a healthy breakfast post the chocolate/candy rush.  (They get to eat candy two times a year before breakfast...Christmas and Easter.  So it's a big deal.)  Plus, it is easy to throw together on a Christmas morning when you don't want to be in the kitchen quite yet.  The best part about this recipe, besides it tasting so fabulous, is that you can make it according to how many people will be eating it.  Enjoy.


Birchermüesli

Ingredients per person:
1/2 cup small rolled oats
1/2 of a green apple, peeled, seeded & shredded
1 Tblsp fresh lemon juice
3-4 Tblsp Plain or Vanilla Yogurt
3-4 Tblsp Sweetened condensed milk
1/2 cup fruit (raspberries, blackberries, strawberries, blueberries, bananas, peaches, & pears)
Optional: nuts (crushed hazelnuts, almonds, or pecans)

Place oats in bowl.  Soak oats in 2 parts water to 1 part oats overnight.  (So if you are making it for 4 people you would put 2 cups oats in a bowl with 4 cups water.  Just helping those not keen on math.) Drain the oats and press out any extra water. Peel apples and using a cheese grater grate apples into the bowl. Add lemon juice and yogurt and stir thoroughly. Start with 2 Tablespoons sweetened condensed milk (per person) and stir together mixture. Add more until desired sweetness level has been achieved. Gently fold in remaining fruit. Add nuts if desired. Serve at room temp.

*If you are making it for a group of 4-5, I usually add about a cup of each fruit listed and squeeze just one lemon.
